What makes us unique
Only exceptional years are vinified. The quality of the harvest, the balance of sugar and acidity, the aromatic richness, and the aging potential are evaluated. Our vintages are aged for a minimum of seven years in the cellar and are transferred to the library collection if they can reach a minimum of 15 years.

What makes us unique
The Chardonnays from the "des Pêcherines" plot were planted in 1969 by Cécile, a pioneer in the planting of white grapes in Chigny-les-Roses. The name of the plot evokes the fruity notes of vine peaches. It is likely that the monks who owned the land were inspired not by the soil but by the aromas when naming this terroir. Protected by the Dessous-le-Mont and overlooking the church, it is a terroir with a character that is both unique and elegant.
